Encinitas, CA – WOW!!!!! That is one of many enthusiastic words that can be used to describe Elizabethan Bakery! I lived in my La Costa Oaks home for almost three years before I was introduced to this hidden Encinitas gem. I feel like I missed out on SO much! I really pride myself on knowing what is happening in our community.

But this little bakery is in a nursery (yes, a plant nursery) in Encinitas – that I had never visited, even though I drove by it at least twice a week! Located at the corner of Encinitas Boulevard and Quail Gardens Road – inside the Sunshine Nursery – is the most delicious, decadent treat in all of North San Diego County! The Red Velvet and Black Beauty are to die for – but really you can’t go wrong with any of the almost 20 varieties of cupcakes.

I was first introduced to Elizabethan cupcakes, by my friend, Kriste! It quickly became a must for La Costa Oaks baby showers or girls’ night. Elizabethan Bakery’s regular size cupcakes sell for $3.25.

I hate to admit that there are some days, I will drive out of my way on my way home to pick up ONE cupcake as my after dinner treat! This speaks volumes since I try not to eat items made from flour!

So, if you are having a party and looking for that special dessert – or just driving through Encinitas – stop by Sunshine Nursery and Elizabethan Desserts!
